Our red label collection showcases how special Wagyu are. Inventory available with this designation rivals imported Japanese wagyu having the A5 designation. This wagyu beef was raised on our small farm in Southeast Connecticut though and has achieved marble scores of BMS 9 or 10 on the Japanese Meat Grading Association's Beef Marble Score scale. This score represents an IMF (Intermuscular Fat) of 50.8 % to 52.9 % as calculated by our carcass camera.

Our email marketing list is used sparingly at this time (Summer ‘22). Our primary use for this feature has been to update our customers on upcoming product availability and the occasional offer. In the future as grow, we hope to also share a monthly or possibly weekly newsletter highlighting a cut of meat or cooking method. As if we’re not busy enough.
