Red Label Collection

Our red label collection showcases how special Wagyu are. Inventory available with this designation rivals imported Japanese wagyu having the A5 designation. This wagyu beef was raised on our small farm in Southeast Connecticut though and has achieved  marble scores of BMS 9 or 10 on the Japanese Meat Grading Association's Beef Marble Score scale. This score represents an IMF (Intermuscular Fat) of 50.8 % to 52.9 % as calculated by our carcass camera.
