Our Yellow Label collection comes from cattle with a marbling percentage between 26 and 39%. So literally starting at twice the percentage marbling found in prime beef, it is orders of magnitude better than anything you’ll find in a supermarket!
Rib Eye Steaks are sliced from the rib sub primal. It is a boneless cut. (When the bone is attached it is called a Rib Steak or Tomahawk steak.) The excellent marbling in this cut leaves it loaded with flavor, and helps it remain tender during cooking. This steak is a candidate for grilling, but our preference is to either sous-vide and sear, or just pan cook them, as it is difficult to get a good sear on a typical grill to lock in the amazingly flavorful fats.
We offer farm pickup on any product shown as in stock at 175 Miller Rd.
Local and regional delivery is available up to 60 miles from the farm excluding Long Island at check out. Please consider contacting us first to learn available delivery dates for your area though.
Finally shipping via UPS is now available. We can ship via the options available to you during chackout Mondays and Tuesdays each week. Perishables must,ship seperate from hard goods.
