Our Blue Label is the pinnacle of Wagyu, achieving marbling percentages above 50%, when available these are equivalent to a BMS 11 or even a 12: the highest available!
The tenderloin, often referred to as the filet or filet mignon, is thought of as the most tender portion of beef, and highly sought after as the best cut available. Typically quite lean, it is a gem with fine marbling in Wagyu. It must not be over-cooked!
Larger packages when available are typically two or three steaks.
