A great package of Mangalitsa Pork from our friends at Oakbrook Farm in Middletown, CT. Mangalitsa is a breed of hogs that originated in the area of Hungry. They are a lard breed, meaning that as they mature they develop a large quantities of fat, a beautiful, rich, white fat! It is quite similar to Wagyu fat BUT that’s not the only similarity. These hogs develop extensive IMF (marbling fat) just like our Wagyu. This gives a very different eating experience when compared to typical pork. You do need to be careful to not over cook this pork, especially the bacon, as the fat will, render quite quickly. My favorite way to have mangalitsa bacon is just after it starts to wrinkle, if you cook it longer I feel you lose too much of the wonderful fat.
