The chuck center steak comes from an area just in front of those that give us the chuck eye and rib eye steaks. It is filled with flavor but a little tougher then those ultra desirable cuts. It’s often used for chuck roasts, but the standard cut for Wagyu is for steaks— which are phenomenal! This cut has a lot of names, including London Broil, shared with cuts from the hind quarter.
